Thai Turkey Lettuce Wraps

Total Time: About 30 Minutes | Makes About 7 Servings (About 21 Lettuce Wraps Total, 3 Per Serving)

What You Need:

  • 28 Ounces of Lean Ground Turkey (About 4 oz per serving)

  • About 2 Cups of Brown Rice, Dry

  • 2 TBSP Sesame Oil

  • 2 Cups Chopped or Shredded Carrots

  • 1 Onion, chopped and diced

  • 1/2 Cup Sliced Green Onions

  • 2 Cloves Garlic, Minced

  • 4-5 TBSP Low Sodium Soy Sauce

  • 2 TBSP Rice Vinegar

  • 2 TBSP Stevia

  • 2 TBSP Peanut Butter

  • 1 TBSP of Sriracha

  • 3 TSP Corn Starch

  • 3 TSP Water

  • About 21 Leaves of Lettuce (3 per serving)

  • Sesame Seeds - for topping

  • Light Ranch - optional for topping


Directions:

  • Cook the brown rice according to package directions. Set aside.

  • Heat a large skillet over medium heat and add in the sesame oil.

  • Add the minced garlic, green onions, chopped onion, and carrots. Cook and stir until the carrots soften.

  • Add the ground turkey and fully cook, stirring every few minutes.

  • Add the stevia, soy sauce, rice vinegar, peanut butter, and siracha. Continue to stir throughout.

  • In a bowl, add the cornstarch and water and whisk together until fully combined. Add the mixture to the pan and stir while the sauce continues to thicken (about 2-3 minutes).

  • Set aside and let cool.

  • Fill each lettuce wrap with the brown rice and the turkey mixture. Top with sesame seeds and light ranch dressing!

  • NOTE - If you want to meal prep this for the week, store the turkey mixture and rice in a separate container and add to the lettuce the day of.
