What You Need:
28 Ounces of Lean Ground Turkey (About 4 oz per serving)
About 2 Cups of Brown Rice, Dry
2 TBSP Sesame Oil
2 Cups Chopped or Shredded Carrots
1 Onion, chopped and diced
1/2 Cup Sliced Green Onions
2 Cloves Garlic, Minced
4-5 TBSP Low Sodium Soy Sauce
2 TBSP Rice Vinegar
2 TBSP Stevia
2 TBSP Peanut Butter
1 TBSP of Sriracha
3 TSP Corn Starch
3 TSP Water
About 21 Leaves of Lettuce (3 per serving)
Sesame Seeds - for topping
Light Ranch - optional for topping
Directions:
Cook the brown rice according to package directions. Set aside.
Heat a large skillet over medium heat and add in the sesame oil.
Add the minced garlic, green onions, chopped onion, and carrots. Cook and stir until the carrots soften.
Add the ground turkey and fully cook, stirring every few minutes.
Add the stevia, soy sauce, rice vinegar, peanut butter, and siracha. Continue to stir throughout.
In a bowl, add the cornstarch and water and whisk together until fully combined. Add the mixture to the pan and stir while the sauce continues to thicken (about 2-3 minutes).
Set aside and let cool.
Fill each lettuce wrap with the brown rice and the turkey mixture. Top with sesame seeds and light ranch dressing!
NOTE - If you want to meal prep this for the week, store the turkey mixture and rice in a separate container and add to the lettuce the day of.
