Teriyaki Sweet Potato Meal Prep

Total Time: About 45 Minutes | Makes about 7 Servings


Sweet Potatoes are a great source of Vitamin A, Vitamin C, Fiber, and Potassium!


What you need:

  • 24 oz Chicken Breast (about 3.5 oz per serving)

  • 7 Cups of Frozen Broccoli

  • 7 Small Sweet Potatoes

  • Teriyaki Sauce

  • Olive Oil

  • Seasonings of Choice


Directions:

  • Preheat the oven to 400 degrees.

  • On a cutting board, slice the chicken into small chunks and add seasonings of choice.

  • Using a non-stick pan, cook for about 10-14 minutes on the stove top (or until fully cooked).

  • Slice the skin off of each sweet potato and chop into small chunks. Note - you can microwave the sweet potatoes for 1 minute to make them easier to chop.

  • Spray a large pan with non-stick spay. Spread the sweet poatoes on the pan and add olive oil and seasonings. Bake in the oven for 35 minutes. (If you want them crispy, keep them in the oven longer!

  • Microwave the broccoli according to package directions.

  • Once all is fully cooked, let the chicken, sweet potatoes, and broccoli cool.

  • Divide into 7 meal prep containers and top with teriyaki sauce/seasonings!
