Total Time: About 60 Minutes | Makes About 7 Servings
What You Need:
•4 Sweet Potatoes
•1 Red Onion
•3 Green Peppers
•2 Cans of Chickpeas
•Eggs (1-2 per serving)
•Olive Oil
•Garlic Powder
•Lemon Pepper Seasoning
•Salt & Pepper to Taste
•Sriracha Sauce
•Cilantro Avocado Dressing (I use the Aldi brand!)
Directions:
•Preheat the oven to 425 degrees.
•Remove the skins of the sweet potatoes and slice into small pieces. (I recommended microwaving for a few minutes to make it easier to cut through).
•Add the sweet potatoes to a large baking sheet (spray with non-stick spray). (Note - you may need to use 2 baking sheets!)
•Cut the red onion and green pepper in small pieces and add to the pan.
•Drain the chickpeas and rinse. Add to the pan as well.
•Drizzle the pan with olive oil and add the garlic powder, lemon pepper seasoning, and salt and pepper to taste. Mix well.
•Bake for about 40-minutes. Let cool.
•Divide and add to 7 different meal prep containers. Store in the refrigerator.
•On the day off, microwave the meal prep container to reheat. Cook 1-2 eggs and add to the mixture.
•Top with sriracha and cilantro avocado dressing and enjoy :)
