Total Time: About 60 Minutes | Makes 8 Servings (1/2 Stuffed Squash Per Serving)
Ingredients:
4 Medium Butternut Squash
2 TBSP Olive Oil
8 Chicken Sausage Links (1 per serving)
About 5 Cups of Frozen Broccoli
8 OZ shredded Pepper Jack Cheese
Salt & Pepper for seasoning
Directions:
Preheat the oven to 400 degrees F. Spray a large baking sheet with non-stick cooking spray or line with parchment paper.
Microwave each squash for about 2 minutes (this makes it easier to cut in half)
Cut each squash in half and carefully remove the seeds.
Lightly drizzle the squash with olive oil and bake for about 40 minutes.
While the squash is baking, microwave the frozen broccoli according to package directions.
Spray a medium pan with non-stick cooking spray. Slice the chicken sausage into small pieces. Cook on the stovetop for about 5-7 minutes.
Remove the broccoli from the microwave and add to the pan with the chicken sausage. Cook for another 5 minutes and season as desired.
Once the squash is cooked, remove from the oven and let cool for a few minutes.
Stuff each squash with the broccoli and chicken sausage mixture.
Top each squash with 1 oz of pepper jack cheese and season again as desired.
Place the squash back into the oven for about 10-15 minutes. Let cool and enjoy!
