What You Need:
About 4 OZ Steak
1/2 Cup Couscous
2-3 Cups Spinach
1/4 Cup Sliced Apples
1 TBSP Dried Cranberries
1 TBSP Walnuts
2 TBSP Goat Cheese Crumbles
2-3 TBSP Apple Thyme Vinaigrette Dressing (I used the Aldi brand!)
Granulated Onion
Italian Seasoning
Directions:
Cook the steak on the stovetop as desired, and season as desired! Let cool and set aside.
Cook the couscous according to the package directions and set aside.
On a cutting board slice the apples into thin small pieces.
In a large bowl or on a large plate, add the spinach.
Add the couscous, steak, sliced apples, dried cranberries, walnuts. and goat cheese crumbles.
Top with the apple thyme dressing and the granulated onion and Italian seasoning! Mix together and enjoy :)
Note: You can meal prep this for the week by cooking the steak and couscous in advance and adding the rest of the components the day of!
