Total Time: About 35 minutes | Makes 7 Servings
Prep in advance for an easy lunch/dinner idea!
What you need:
21 oz Frozen Cooked Shrimp
3.5 Cups Brown Rice, Uncooked
7 Cups of Asparagus (1 cup is about 6 spears)
1 TBSP Olive oil
Seasonings of Choice (I used black pepper and paprika)
Soy Sauce
Directions:
Place the shrimp into a bowl of warm water and let thaw. Preheat the oven to 400 degrees F.
Cook the brown rice on the stove top according to package directions.
Grab a large pan and spray with non-stick cooking spray. Spread the asparagus across the pan and top with the olive oil and seasonings of choice. Place in the oven for about 15-20 minutes. (If you like them crispy, leave in the oven a few minutes longer!)
Using a non-stick pan, cook the shrimp on medium heat for about 8 minutes and add seasonings.
Drain the rice when fully cooked. Let the rice, asparagus, and shrimp cool before plating.
Seperate into 7 meal prep containers and top with soy sauce!
Note - You can store in the refrigerator or the freezer and use the microwave to reheat!
