What You Need:
About 28 Ounces of Lean Ground Turkey
3 Cans of Green Chiles (4 ounce cans)
About 3.5 Cups of Pinto Beans
2 Cans of Sweet Corn (15.25 ounce cans)
1/2 Cup Chopped Green Onions
1/2 Cup Plain Greek Yogurt
2.5 Cups Low-Sodium Chicken Broth
1 TBSP Lime Juice
1 Chopped Onion
1 TBSP Olive Oil
1 Avocado
Shredded Cheese - for topping
Granulated Garlic - seasoning
Crushed Red Pepper Flakes - seasoning
Lemon Pepper Seasoning - seasoning
Salt & Pepper - seasoning
Directions:
Fully cook the ground turkey on the stovetop. Season as desired and set aside.
Heat the olive oil in a large pot on medium heat. Add the chicken broth, green chilies and chopped onion.
Drain the pinto beans and corn and rinse. Add to the pot and continue to stir.
Add in the cooked turkey and stir.
Add the lime juice, greek yogurt, green onion, and seasonings. Stir on medium heat for about 10-15 minutes.
Seperate into 7 servings. Top with shredded cheese and a sliced avocado. Enjoy!
