What you Need:
4 Lean 4oz Pork Chops
Olive Oil
1 1/2 Cup Brown Jasmine Rice
Fresh Salsa
1 Cup Canned Coconut Milk
1 Mango
Seasonings of Choice
1 Lime
Directions:
Cook rice according to package directions and let cool.
Cook pork chops with olive oil on medium heat until fully cooked. Add seasonings of choice.
While the rice and pork are cooking, chop the mango into small pieces.
Add the rice to a large bowl and mix with canned coconut milk. Add seasonings of choice.
Add the rice to a plate and top with the salsa, chopped mango, and pork chop. Top with the lime and enjoy!
