Pork Chop with Coconut Rice & Mango Salsa

Total Time: About 25 Minutes | Makes About 4 Servings



What you Need:

  • 4 Lean 4oz Pork Chops

  • Olive Oil

  • 1 1/2 Cup Brown Jasmine Rice

  • Fresh Salsa

  • 1 Cup Canned Coconut Milk

  • 1 Mango

  • Seasonings of Choice

  • 1 Lime


Directions:

  • Cook rice according to package directions and let cool.

  • Cook pork chops with olive oil on medium heat until fully cooked. Add seasonings of choice.

  • While the rice and pork are cooking, chop the mango into small pieces.

  • Add the rice to a large bowl and mix with canned coconut milk. Add seasonings of choice.

  • Add the rice to a plate and top with the salsa, chopped mango, and pork chop. Top with the lime and enjoy!
