A quick & easy lunch idea!
What You Need:
About 2 oz dry of protein pasta (I love the Aldi brand or Banza Pasta)
About 1/4 cup pesto pasta sauce
1/2 cup of cooked edamame (I recommend using frozen)
Italian Seasoning
Optional - 1 TBSP sliced almonds
Directions:
Cook the pasta according to the package directions. Set aside and let cool.
Microwave the edamame according to package directions.
Add the pesto sauce to the pasta and add in the cooked edamame.
Top with Italian seasoning. (Option to top with sliced almonds as well). Enjoy!
