No-Bake Vegan Cinnamon Rolls

Total Time: About 50 Minutes | Makes About 7 Servings

What You Need:


For the Dough:

  • 1/2 Cup Almond Flour

  • 1 1/3 Cups Oat Flour (Note - you can blend up oats to make this yourself!)

  • 1/3 Cup Almond Butter (or nut butter of choice)

  • 4 TBSP Light Agave

  • 1/4 Cup Almond Milk (or non-dairy milk of choice)

  • 1 Tsp Vanilla Extract

  • 1/2 Tsp Baking Powder


For the Filling:

  • 1 Cup Pitted Dates

  • 1/3 Cup Almond Butter (or nut butter of choice)

  • 2 TBSP Almond Milk (or non-dairy milk of choice)

  • 2 Tsp Vanilla Extract

  • 1 TBSP Cinnamon


Direction:

  • To prepare the dough, combine the oat flour, almond flour, almond butter, agave, baking powder, and vanilla. Gradually add the almond milk about 1 TBSP at a time until a thick dough forms. NOTE - you can use a food processor to blend easier. Blend or stir until fully combined.

  • Lay the dough on a sheet of parchment paper. Roll into a long rectangle. Set aside.

  • To prepare the filling, combine the dates, almond butter, almond milk, vanilla, and cinnamon to a blender or food processor. Blend until smooth.

  • Spread the mixture evenly across the dough. Carefully roll the dough into a log.

  • Before cutting, place the log of dough into the freezer for 25-35 minutes or until firm.

  • Slice into about 7 rolls! Note - store in the refrigerator or freezer in an airtight container. If stored in the freezer, let thaw before eating!

  • You can enjoy cold or also microwave for about 20 seconds. Enjoy :)
