What You Need:
For the Dough:
1/2 Cup Almond Flour
1 1/3 Cups Oat Flour (Note - you can blend up oats to make this yourself!)
1/3 Cup Almond Butter (or nut butter of choice)
4 TBSP Light Agave
1/4 Cup Almond Milk (or non-dairy milk of choice)
1 Tsp Vanilla Extract
1/2 Tsp Baking Powder
For the Filling:
1 Cup Pitted Dates
1/3 Cup Almond Butter (or nut butter of choice)
2 TBSP Almond Milk (or non-dairy milk of choice)
2 Tsp Vanilla Extract
1 TBSP Cinnamon
Direction:
To prepare the dough, combine the oat flour, almond flour, almond butter, agave, baking powder, and vanilla. Gradually add the almond milk about 1 TBSP at a time until a thick dough forms. NOTE - you can use a food processor to blend easier. Blend or stir until fully combined.
Lay the dough on a sheet of parchment paper. Roll into a long rectangle. Set aside.
To prepare the filling, combine the dates, almond butter, almond milk, vanilla, and cinnamon to a blender or food processor. Blend until smooth.
Spread the mixture evenly across the dough. Carefully roll the dough into a log.
Before cutting, place the log of dough into the freezer for 25-35 minutes or until firm.
Slice into about 7 rolls! Note - store in the refrigerator or freezer in an airtight container. If stored in the freezer, let thaw before eating!
You can enjoy cold or also microwave for about 20 seconds. Enjoy :)
