Total Time: About 45 Minutes | Makes About 7-8 Servings
This recipe uses the typical apple crisp ingredients but substitutes the granulated sugar with stevia and uses oat flour!
What You Need:
For the apple filling:
4 Cups of sliced and peeled apples (I used granny smith apples, but you can use any apple of choice)
2 Tsp Vanilla Extract
2 Tsp Cinnamon
4 TBSP Oat Flour
3/4 Cup Stevia (Note - you can use less depending on your preference)
2 Tsp Lemon Juice
For the topping:
1/2 Cup Oat Flour
1/2 Cup old fashioned rolled oats
1/2 Cup Brown sugar
1 Tsp Cinnamon
6 TBSP Cold butter, cubed
Directions:
Preheat the oven to 375 degrees F. Lightly grease an oven safe baking dish.
Add the apples, stevia, oat flour, lemon juice, cinnamon, and vanilla to a bowl. Toss together to evenly coat the apples.
Pour the apple mixture into the baking dish.
In a separate bowl add the oat flour, oats, brown sugar, cinnamon, and butter for the topping.
Use a fork or pastry cutter to combine the ingredients and break up the butter into small pieces.
Spread the topping evenly across the apples.
Bake for about 30 minutes or until the apples and crisp are golden brown.
Top with whipped cream!
