Total Time: 1 Hour and 25 minutes | Makes About 12 Servings
What You Need:
1 Cup Peanut Butter
1/3 Cup Agave
1/2 Tsp Vanilla Extract
1/2 tsp Salt
1 3/4 Cups Special K cereal (pictured above) or cornflake cereal
1 Cup Chocolate Chips
1 Tsp Coconut Oil
Ice Cube Container
Directions:
Add peanut butter, agave, vanilla, and salt to a small saucepan. Cook and stir over medium heat for a few minutes until smooth.
In a large bowl, add the cereal and peanut butter mixture. Stir until combined crushing the cereal as you stir.
Add the mixture into the ice cube containers to form logs. Freeze for about 45 minutes to an hour.
Once frozen, melt the chocolate and coconut oil together in either the microwave or sauce pan (do not overheat) If using the microwave, I recommend heating for 30 seconds at a time and stirring.
Remove the "butterfinger" logs from the ice cube trays and dip into the chocolate to fully coat. Freeze again for 10-15 minutes. Enjoy!
Note - Store in either the refriegerator or freezer.
