What You Need:
3 Medium Zucchini
2 Cups Brown Rice, Dry
28 Ounces Lean Ground Beef (4 oz per serving)
Lemon Lime Hot Sauce
Olive Oil
Seasonings of Choice
Directions:
Preheat the oven to 450 degrees. Spray a large baking pan with non-stick spray.
On a cutting board, dice the zucchini into small pieces and spread across the baking pan. Drizzle with olive oil and seasonings of choice.
Bake for about 15-20 minutes or until golden brown. Set aside and let cool.
Cook the ground beef on the stovetop until fully cooked. Season as desired. Set aside.
Cook the brown rice according to the package directions.
Combine the zucchini, ground beef, and brown rice. Add seasonings and top with lemon lime hot sauce (or sauce of choice).
