Feta Avocado Salmon + Quinoa

Simple to make. Packed with protein & omega-3s!


Total Time: 30 Minutes | Makes About 7 Servings


What You Need:

  • 7 Salmon Filets

  • About 2 Cups Dry Quinoa

  • 7 oz Feta Cheese

  • 4 Jalapeno Peppers

  • Italian Seasoning

  • Granulated Onion

  • Granulated Garlic

  • 7 Avocados

  • 1 Tsp Lemon Juice

  • Olive Oil


Directions:

  • Preheat oven to 400 degrees. Lightly drizzle the salmon with olive oil and add seasonings. Cook for about 15-18 minutes (or until fully cooked).

  • Cook the quinoa according to package directions on the stovetop.

  • On a cutting board, chop the avocado and jalapeno peppers into small pieces.

  • In a large bowl add the avocado pieces, jalapeno pieces, and feta. Add in the lemon juice and seasonings and mix.

  • Add the quinoa and cooked salmon to a bowl/plate and top with the avocado and feta mixure. (You can also add your sauce of choice if preferred). Enjoy!
