What You Need:
7 Salmon Filets
About 2 Cups Dry Quinoa
7 oz Feta Cheese
4 Jalapeno Peppers
Italian Seasoning
Granulated Onion
Granulated Garlic
7 Avocados
1 Tsp Lemon Juice
Olive Oil
Directions:
Preheat oven to 400 degrees. Lightly drizzle the salmon with olive oil and add seasonings. Cook for about 15-18 minutes (or until fully cooked).
Cook the quinoa according to package directions on the stovetop.
On a cutting board, chop the avocado and jalapeno peppers into small pieces.
In a large bowl add the avocado pieces, jalapeno pieces, and feta. Add in the lemon juice and seasonings and mix.
Add the quinoa and cooked salmon to a bowl/plate and top with the avocado and feta mixure. (You can also add your sauce of choice if preferred). Enjoy!
