What You Need:
4 OZ of Frozen Cooked Shrimp
White Sesame Seeds
1 Avocado
1/4 Cup of Brown Jasmine Rice
1/4 Cup of Sushi Rice
1/2 Cucumber
1 oz Seaweed Sheet (or about 3 small sheets)
Light Mayo
Sriracha Sauce
Directions:
Thaw the shrimp in warm water for at least 10 minutes.
Cook the jasmine rice and the sushi rice according to the package directions. Once cooked, let drain and cool. Note - you can use just 1 type of rice to make it easier! I like the flavor and texture of the sushi rice and the nutrients from the brown jasmine rice so I use both for a good balance:)
Cook the shrimp on medium heat for about 7-10 minutes. Let cool.
On a cutting bored, chop the avocado, cucumber, cooked shrimp, and seaweed sheet into small pieces.
In a bowl, first add both rices. Then add the chopped avocado, cucumber, shrimp, and seaweed pieces.
Drizzle with the light mayo and sriracha sauce. Top with the white sesame seeds and enjoy :)
