Easy Protein-Packed Egg Bake

Total Time: 45 Minutes | Make About 7-8 Servings (about 14-16 slices total, 2 slices per serving)


Ingredients:

  • 24 Eggs

  • 36 ounces (1 tub) of Reduced Fat Cottage Cheese 

  • 2 Cups Milk of choice 

  • 1 Cup Grated Parmesan Cheese 

  • 5-6 Cups of Chopped Spinach 

  • Salt & Pepper for seasoning

  • Red Pepper Flakes for seasoning 

  • 7 Whole Wheat English Muffins



Directions:

  • Preheat the oven to 375 degrees F. Spray two 9x13 baking dishes with non-stick cooking spray.

  • In a large bowl, add the eggs and whisk. 

  • Add the milk, cottage cheese, spinach, and ¾ cup of the parmesan cheese and stir.

  • Pour the egg mixture into the two baking dishes. Add the salt, pepper, and red pepper flakes to season. 

  • Top with the remaining ¼ cup of parmesan cheese.

  • Bake for 35-40 minutes or until a toothpick/fork comes out clean.

  • Let cool and split each pan into 7-8 slices.

  • Pair with a whole wheat english muffin. Enjoy!
