Total Time: 45 Minutes | Make About 7-8 Servings (about 14-16 slices total, 2 slices per serving)
Ingredients:
24 Eggs
36 ounces (1 tub) of Reduced Fat Cottage Cheese
2 Cups Milk of choice
1 Cup Grated Parmesan Cheese
5-6 Cups of Chopped Spinach
Salt & Pepper for seasoning
Red Pepper Flakes for seasoning
7 Whole Wheat English Muffins
Directions:
Preheat the oven to 375 degrees F. Spray two 9x13 baking dishes with non-stick cooking spray.
In a large bowl, add the eggs and whisk.
Add the milk, cottage cheese, spinach, and ¾ cup of the parmesan cheese and stir.
Pour the egg mixture into the two baking dishes. Add the salt, pepper, and red pepper flakes to season.
Top with the remaining ¼ cup of parmesan cheese.
Bake for 35-40 minutes or until a toothpick/fork comes out clean.
Let cool and split each pan into 7-8 slices.
Pair with a whole wheat english muffin. Enjoy!
