Total Time: About 20 Minutes | Makes 7 Servings
What You Need:
About 28 Ounces Lean Ground Chicken
1 Red Onion
1 Can of Chickpeas
1 Can of Black Olives
1 Bag of Romaine Lettuce
7 Small Roma Tomatoes
7 Whole Wheat Pitas
Cilantro Avocado Yogurt Dressing (I used the Aldi brand)
1 TBSP Olive Oil
2 Teaspoons Balsamic Vinegar
Black Pepper
Oregano
Directions:
Cook ground chicken on the stovestop on medium heat until fully cooked. Season with black pepper and oregano. Let cool and add to a large bowl.
Chop the red onion, tomatoes, and black olives into small pieces and add to the bowl.
Rinse the chickpeas and add to the bowl. Add the olive oil and balsamic vinegar and stir. Add in black pepper and oregano to the mixture.
If you are meal prepping this for the week, separate into 7 containers and store in the refrigerator.
When you are ready to make, add the lettuce, dressing, and pita on the side. Enjoy!
Note: You can either stuff the pita or just enjoy on the side :)
