Easy Greek Yogurt - Key Lime Pie

Total Time: About 30 Minutes + 1 hour to cool & refrigerate overnight | Makes 1 Pie (9 inch)

What You Need:

  • 1 Graham Cracker Pie Crust

  • 3 Egg Yolks

  • 3 TBSP Stevia

  • 3 TBSP Light Agave Syrup

  • 1.5 TBSP Corn Starch

  • 1 Cup Greek Yogurt

  • 1 (14 Oz) Can Condensed Milk

  • 1 TSP Lime Zest

  • 3/4 Cup Lime Juice

  • Whipped Topping


Directions:

  • Preheat the oven to 350 degrees F.

  • In a bowl, whisk together the condensed milk and the egg yolks. Whisk in the corn starch, stevia, agave, greek yogurt, and lime zest.

  • Finally, whisk in the lime juice. Pour the mixture into the crust and bake for about 15 minutes. (Note - the center will still be slightly runny but will firm in the refrigerator).

  • Remove from the oven and let cool for at least 1 hour. Refrigerate overnight.

  • Slice and serve with whipped topping.
