What You Need:
1 Graham Cracker Pie Crust
3 Egg Yolks
3 TBSP Stevia
3 TBSP Light Agave Syrup
1.5 TBSP Corn Starch
1 Cup Greek Yogurt
1 (14 Oz) Can Condensed Milk
1 TSP Lime Zest
3/4 Cup Lime Juice
Whipped Topping
Directions:
Preheat the oven to 350 degrees F.
In a bowl, whisk together the condensed milk and the egg yolks. Whisk in the corn starch, stevia, agave, greek yogurt, and lime zest.
Finally, whisk in the lime juice. Pour the mixture into the crust and bake for about 15 minutes. (Note - the center will still be slightly runny but will firm in the refrigerator).
Remove from the oven and let cool for at least 1 hour. Refrigerate overnight.
Slice and serve with whipped topping.
