Easy Chicken Avocado Bowl

Total Time: About 25 Minutes | Makes About 7 Servings

What You Need:

  • About 28 Ounces of Chicken Breast (4 oz per serving)

  • 2 Cups Dry Brown Rice (can use instant rice to save time!)

  • 2 Cans of Corn

  • 2 Cans of Diced Tomatoes

  • 7 Avocados

  • 1/4 Cup Cilantro

  • Avocado Ranch Dressing (for topping)


Directions:

  • Fully cook the chicken on the stovetop and season as desired. Let cool and set aside.

  • Cook the brown rice according to package directions. Let cool and set aside.

  • Drain and rinse the corn and diced tomatoes.

  • Chop the cilantro into small pieces.

  • In 7 different meal prep containers, combine the brown rice, corn, diced tomatoes, chicken, and cilantro.

  • On the day of, add the sliced avocado and avocado ranch dressing!
