What You Need:
About 28 Ounces of Chicken Breast (4 oz per serving)
2 Cups Dry Brown Rice (can use instant rice to save time!)
2 Cans of Corn
2 Cans of Diced Tomatoes
7 Avocados
1/4 Cup Cilantro
Avocado Ranch Dressing (for topping)
Directions:
Fully cook the chicken on the stovetop and season as desired. Let cool and set aside.
Cook the brown rice according to package directions. Let cool and set aside.
Drain and rinse the corn and diced tomatoes.
Chop the cilantro into small pieces.
In 7 different meal prep containers, combine the brown rice, corn, diced tomatoes, chicken, and cilantro.
On the day of, add the sliced avocado and avocado ranch dressing!
