This 7-Ingredient buritto bowl is a go-to meal prep idea when you are short on time! You can prep this in advance and store in the freezer/refrigerator for the week.
What you need:
28 oz Lean Ground Turkey
2 Cans of Corn
2 Cans of Black Beans
About 1.5 Cups Uncooked Brown rice
1 Jar of Salsa (I love using the Trader Joe's Pepita Salsa for extra flavor!)
1 Creamy Dill Dressing (I used the Trader Joe's brand here as well. Bolthouse Farms is another great brand sold at most grocery stores)
1 bag of Shredded Letuce
Directions:
Fully cook groud turkey on a stovetop. Add seasonings of choice. (Usually takes around 9-12 minutes on medium heat). Once cooked, let cool for 5-10 minutes.
Cook brown rice on stove top according to package directions. Once cooked, drain and let cool for 5-10 minutes.
Drain the black beans and corn. Rinse and add to separate bowls.
Add the cooked turkey, cooked brown rice, black beans, and corn to 7 different meal prep containers (dividing each into 7 servings).
Store in the freezer or refrigerator for the week.
The day of, reheat for 2-3 minutes in the microwave. Top with salsa, dill dressing, and shredded lettuce!
