Cinnamon Crunch Banana Bread

Total Time: About 70 Minutes | Makes About 7-9 Servings



What You Need:


For the Banana Bread:

  • 2 Eggs

  • 4 Small Mashed Ripe Bananas

  • 3/4 Cup Coconut Sugar

  • 1/3 Cup Coconut Oil

  • 1/2 Cup Vanilla Greek Yogurt

  • 1 3/4 Cups Whole Wheat Flour

  • 1/4 Cup Cornstarch

  • 2 Teaspoons Cinnamon

  • 1 Teaspoon Baking Powder

  • 1/4 Teaspoon of Salt


For The Topping:

  • 1/2 Cup Whole Wheat Flour

  • 1/2 Cup Coconut Sugar OR Brown Sugar

  • 2 Teaspoons Cinnamon

  • 3 TBSP Unsalted Butter


Directions:

  • Preheat Oven to 360 Degrees.

  • In a medium bowl, combine the eggs, mashed bananas, coconut sugar, coconut oil, and vanilla greek yogurt. Mix well.

  • In a large bowl mix together the dry ingredients: Whole Wheat Flour, Cornstarch, Cinnamon, Baking Powder, and Salt.

  • Add the wet ingredients into the large bowl and stir.

  • Spray a loaf pan (9x5 inches) with non-stick cooking spray. Add in the mixture.

  • To prepare the topping, in a seperate bowl, mix together the flour, coconut sugar (OR brown sugar), and cinnamon. Rub in the butter (it's easiest with your hands) until crumbs form.

  • Spread topping over the banana bread mixture and bake for about 50-60 minutes or until toothpick comes out clean. Enjoy :)

  • NOTE - I used coconut sugar for the base and brown sugar for the topping but you can use whatever you prefer.
