What You Need:
For the Banana Bread:
2 Eggs
4 Small Mashed Ripe Bananas
3/4 Cup Coconut Sugar
1/3 Cup Coconut Oil
1/2 Cup Vanilla Greek Yogurt
1 3/4 Cups Whole Wheat Flour
1/4 Cup Cornstarch
2 Teaspoons Cinnamon
1 Teaspoon Baking Powder
1/4 Teaspoon of Salt
For The Topping:
1/2 Cup Whole Wheat Flour
1/2 Cup Coconut Sugar OR Brown Sugar
2 Teaspoons Cinnamon
3 TBSP Unsalted Butter
Directions:
Preheat Oven to 360 Degrees.
In a medium bowl, combine the eggs, mashed bananas, coconut sugar, coconut oil, and vanilla greek yogurt. Mix well.
In a large bowl mix together the dry ingredients: Whole Wheat Flour, Cornstarch, Cinnamon, Baking Powder, and Salt.
Add the wet ingredients into the large bowl and stir.
Spray a loaf pan (9x5 inches) with non-stick cooking spray. Add in the mixture.
To prepare the topping, in a seperate bowl, mix together the flour, coconut sugar (OR brown sugar), and cinnamon. Rub in the butter (it's easiest with your hands) until crumbs form.
Spread topping over the banana bread mixture and bake for about 50-60 minutes or until toothpick comes out clean. Enjoy :)
NOTE - I used coconut sugar for the base and brown sugar for the topping but you can use whatever you prefer.
