Chicken Meatball Greek Bowl

Total Time: About 40 Minutes | Makes about 7 Servings



What you Need:

  • About 28 oz Lean Ground Chicken

  • 1.75 Cups Dry Brown Jasmine Rice

  • 4 Cloves Garlic

  • 5 Tomatoes

  • 1 Red Onion

  • 3 Medium Cucumbers

  • 1 Romaine Lettuce Head

  • Tzatziki sauce, or Creamy Dill Dressing, or sauce of choice

  • Italian Seasoning

  • Black Pepper

  • Crushed Red Pepper Flakes

  • Feta Cheese (Optional)


Directions:

  • In a mixing bowl combine the ground chicken, italian seasoning, black pepper, and crushed red pepper flakes. Use hands to mix until combined.

  • Use a spoon (or ice cream scooper) to scoop the chicken mixure and form into about 28 meatballs.

  • Cook the meatballs on a large pan over medium heat. Cook about 4 minutes per side, continuing to rotate until fully cooked.

  • While the meatballs are cooking, cook the jasmine rice according to package directions.

  • On a cutting board, chop the tomatoes, red onion, garlic, and cucumber into small peices. Add to a seperate pan and season with italian seasoning, black pepper, and crushed red pepper flakes. Cook over medium heat for about 5-7 minutes . (You can add a tablespoon of olive oil or can skip).

  • Once the meatballs, rice, and vegtable mixture are all fully cooked, seperate into 7 meal prep containers. (Can store in the freezer or fridge for the week and reheat)

  • Top with slices of romaine lettuce and dressing. (Can add feta cheese as a topping as well) Enjoy!
