What you Need:
About 28 oz Lean Ground Chicken
1.75 Cups Dry Brown Jasmine Rice
4 Cloves Garlic
5 Tomatoes
1 Red Onion
3 Medium Cucumbers
1 Romaine Lettuce Head
Tzatziki sauce, or Creamy Dill Dressing, or sauce of choice
Italian Seasoning
Black Pepper
Crushed Red Pepper Flakes
Feta Cheese (Optional)
Directions:
In a mixing bowl combine the ground chicken, italian seasoning, black pepper, and crushed red pepper flakes. Use hands to mix until combined.
Use a spoon (or ice cream scooper) to scoop the chicken mixure and form into about 28 meatballs.
Cook the meatballs on a large pan over medium heat. Cook about 4 minutes per side, continuing to rotate until fully cooked.
While the meatballs are cooking, cook the jasmine rice according to package directions.
On a cutting board, chop the tomatoes, red onion, garlic, and cucumber into small peices. Add to a seperate pan and season with italian seasoning, black pepper, and crushed red pepper flakes. Cook over medium heat for about 5-7 minutes . (You can add a tablespoon of olive oil or can skip).
Once the meatballs, rice, and vegtable mixture are all fully cooked, seperate into 7 meal prep containers. (Can store in the freezer or fridge for the week and reheat)
Top with slices of romaine lettuce and dressing. (Can add feta cheese as a topping as well) Enjoy!
