Chicken & Black Bean Corn Salsa

Total Time: About 25 Minutes | Makes about 7 Servings





What You Need:

  • About 28 oz Chicken Breast (4 oz per serving)

  • 2 Cans of Corn

  • 2 Cans of Tomatoes

  • 2 Cans of Black Beans

  • 1 Small Package of Cilantro

  • 1 Red Onion

  • 1 TSP Lime Juice

  • Seasonings (I used black pepper and paprika)


Directions:

  • Season chicken and cook on medium heat until fully cooked.

  • Chop the cilantro and onions into small pieces. Add to a large bowl.

  • Drain the corn, black beans and tomatoes and rinse. Add to the bowl.

  • Add the lime juice and seasonings and stir.


Notes:

  • If using this as a meal prep, you can divide into 7 different containers and store in the refrigerator.

  • You can enjoy by itself or eat with tortilla chips!
