What You Need:
About 28 oz Chicken Breast (4 oz per serving)
2 Cans of Corn
2 Cans of Tomatoes
2 Cans of Black Beans
1 Small Package of Cilantro
1 Red Onion
1 TSP Lime Juice
Seasonings (I used black pepper and paprika)
Directions:
Season chicken and cook on medium heat until fully cooked.
Chop the cilantro and onions into small pieces. Add to a large bowl.
Drain the corn, black beans and tomatoes and rinse. Add to the bowl.
Add the lime juice and seasonings and stir.
Notes:
If using this as a meal prep, you can divide into 7 different containers and store in the refrigerator.
You can enjoy by itself or eat with tortilla chips!
