Buffalo Chicken Chickpea Wrap

Total Time: About 25 Minutes | Makes 1 Serving

What You Need:

  • 4 OZ Chicken Breast

  • 1/4 Cup Chickpeas (drain and rinse)

  • 1/4 Cup Romaine Lettuce

  • 2 TBSP Red Onion

  • 2 TBSP Diced Celery

  • Granulated Garlic

  • Paprika

  • Black Pepper

  • 1 Avocado

  • 1 Whole Wheat Wrap (or wrap of choice)

  • 2 TBSP Buffalo Sauce

  • 1 TBSP Light Ranch


Directions:

  • Fully cook the chicken on the stovetop on medium heat. Season with granulated garlic, paprika and black pepper. Let cool and set aside.

  • Drain and rinse the chickpeas and set aside.

  • Chop the onion, celery, and avocado into small pieces and set aside.

  • Lay out the whole wheat wrap. Add the lettuce, chickpeas, onions, celery, and avocado.

  • Add the buffalo sauce and light ranch. Top with granulated garlic, paprika, and black pepper.

  • Carefully fold together using a toothpick to hold. Enjoy :)


NOTE - You can easily meal prep this for the week by preparing the chicken, chickpeas, onion, and celery in advance and store in the refrigerator!
