Banana Chocolate Chip Muffins

Total Time: About 30 Minutes | Makes 12 Muffins



What you need:

  • 3 Ripe Bananas

  • 1 Egg

  • 1/2 Cup Greek Yogurt

  • 1/4 Cup Agave (Can substitute with maple syrup/honey)

  • 3 Tbsp Coconut Oil

  • 1 Tsp Vanilla Extract

  • 1/2 Tsp Cinnamon

  • 1 Tsp Baking Powder

  • 1/2 Tsp Baking Soda

  • 1/4 Tsp Salt

  • 1 1/3 Cups Whole Wheat Flour (or flour of choice)

  • 1/2 Cup Chocolate Chips

  • Non-Stick Cooking Spray


Directions:

  • Preheat Oven to 375 degrees F. Line muffin tray with liners and spray with non-stick cooking spray.

  • Mash bananas and add to a large bowl. Add the egg, yogurt, agave, coconut oil, vanilla extract, cinnamon, baking powder, baking soda, and salt. Stir to combine.

  • Add the flour and stir.

  • Add the chocolate chips and lightly stir.

  • Fill each muffin tin about 3/4 full and top with a few more chocolate chips.

  • Bake for 20 minutes. Let cool for 5-10 and enjoy!
