Total Time: About 30 Minutes | Makes 12 Muffins
What you need:
3 Ripe Bananas
1 Egg
1/2 Cup Greek Yogurt
1/4 Cup Agave (Can substitute with maple syrup/honey)
3 Tbsp Coconut Oil
1 Tsp Vanilla Extract
1/2 Tsp Cinnamon
1 Tsp Baking Powder
1/2 Tsp Baking Soda
1/4 Tsp Salt
1 1/3 Cups Whole Wheat Flour (or flour of choice)
1/2 Cup Chocolate Chips
Non-Stick Cooking Spray
Directions:
Preheat Oven to 375 degrees F. Line muffin tray with liners and spray with non-stick cooking spray.
Mash bananas and add to a large bowl. Add the egg, yogurt, agave, coconut oil, vanilla extract, cinnamon, baking powder, baking soda, and salt. Stir to combine.
Add the flour and stir.
Add the chocolate chips and lightly stir.
Fill each muffin tin about 3/4 full and top with a few more chocolate chips.
Bake for 20 minutes. Let cool for 5-10 and enjoy!
