Almond Flour PB Cookies

Total Time: About 25 Minutes | Makes About 20 Cookies



What You Need:

  • 1 3/4 Cups Almond Flour

  • 1/2 Teaspoon Baking Soda

  • 1/3 Cup Unsalted Butter

  • 2/3 Cup Peanut Butter

  • 1/3 Cup Coconut Sugar (or light brown sugar)

  • 1/4 Cup Stevia (or other sugar substitute)

  • 1 Egg

  • 1 Teaspoon Vanilla


Directions:

  • Preheat the oven to 350 degrees.

  • Mix the almond flour and baking soda in a medium bowl.

  • Melt the butter for about 30 seconds (or until halfway melted).

  • In a separate large bowl, add the melted butter, peanut butter, and sugar and mix. Then add the egg and vanilla.

  • Add the almond flour mixture and stir.

  • Form into balls and bake for about 9-10 minutes (cookies will be soft when you first remove from the oven but will firm when cooled) Enjoy!
