What You Need:
1 3/4 Cups Almond Flour
1/2 Teaspoon Baking Soda
1/3 Cup Unsalted Butter
2/3 Cup Peanut Butter
1/3 Cup Coconut Sugar (or light brown sugar)
1/4 Cup Stevia (or other sugar substitute)
1 Egg
1 Teaspoon Vanilla
Directions:
Preheat the oven to 350 degrees.
Mix the almond flour and baking soda in a medium bowl.
Melt the butter for about 30 seconds (or until halfway melted).
In a separate large bowl, add the melted butter, peanut butter, and sugar and mix. Then add the egg and vanilla.
Add the almond flour mixture and stir.
Form into balls and bake for about 9-10 minutes (cookies will be soft when you first remove from the oven but will firm when cooled) Enjoy!
